    Tomato-Zucchini Sauce Tossed w/ Cavatappi

    List of Ingredients

    16 ounces Dakota Growers Cavatappi
    6 tablespoons olive oil
    2 garlic cloves, crushed
    2 medium zucchinis cut in half and sliced into 1/4” slices
    1 1/2 pounds ripe tomatoes sliced into 1/2” cubes
    1/2 teaspoon crushed dried red pepper flakes
    1/4 cup chopped fresh basil
    1 can (6 ounces) black olives, sliced
    Salt and black pepper to taste

    Recipe

    Cook cavatappi according to package directions. In a large skillet, heat olive oil over medium heat. Sauté garlic until tender.

    Add zucchini and sauté until tender or about 3-5 minutes. Add tomatoes, hot pepper, basil, and black olives and season with salt and pepper to taste. Simmer for 10 minutes.

    Toss with hot cavatappi and serve. Fresh grated Parmesan cheese may be sprinkled on top.
