    1 cup flour
    1 cup coconut milk
    1 egg
    2 tablespoons sugar
    2 tablespoons water
    1/2 teaspoon vegetable oil
    1 cup heavy cream
    1/3 cup powdered sugar
    1/3 cup grated coconut


    Recipe



    Stir together flour, coconut milk, egg, sugar and water. Blend until smooth, adding additional water if necessary to make a thin batter.

    Lightly grease skillet with oil over medium heat. Pour in just enough batter to cover the bottom of the pan with a thin layer and quickly rotate the pan to cover evenly. Cook until edges curl, about 1 minute, then flip over. Cook until just set. Remove to plate. Continue making crepes with remaing batter.

    Whip heavy cream until soft peaks form. Spread each crepe with a portion of cream, powdered sugar and coconut. Fold in half and place on dessert plates. Sprinkle with powdered sugar.


    Makes about 8 - 10 crepes.
