Tart: Home-Style Apricot Tart

1/2 cup canned almond paste
1 egg
2 tablespoons all-purpose flour
1 tablespoon lemon juice
2 teaspoons grated lemon zest
1 disk (1/2 package) refrigerated pie crust (from a 15-ounce package)
1 can (16 ounce) apricot halves, drained
3 tablespoons sliced almonds
Recipe
Preheat oven to 400º F. In mixer, blend together almond paste, egg, flour, lemon juice and zest until smooth. Unfold pastry and place it on a rimmed baking sheet. Spread almond mixture evenly over pastry, leaving a 1-inch border all around. Arrange apricots, cut side down on almond mixture. Fold edges of pastry in and over apricots. (Don’t worry if edges are ragged and uneven - it’s a rustic tart.) Sprinkle fruit with almonds.
Bake 30 minutes or until pastry and nuts are golden brown and fruit is bubbly. Let cool; serve warm or at room temperature. Refrigerate leftovers.
