COCONUT-MACADAMIA CRUST
1 1/2 cups ground toasted macadamia nuts
1/2 cup grated fresh coconut
1/2 teaspoon ground ginger
1/4 cup sugar
6 tablespoons unsalted butter, melted
MANGO FILLING
6 mangoes, peeled and diced
1 cup sugar
1 teaspoon vanilla
1 teaspoon cornstarch
Pinch five-spice powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Zest 1 lime
2 tablespoons dark rum
1 cup whipped cream, as accompaniment
Recipe
To prepare the crust: In a large bowl, combine the macadamia nuts, coconut, ginger, and sugar, and mix well. Add the melted butter, and mix well. Press the mixture into a well-greased 10-inch flan pan with a removable bottom. Refrigerate.
Preheat the oven to 375 degrees.
To prepare the filling: Place the mangoes in a bowl, add the sugar, vanilla, cornstarch, five-spice, cinnamon, ginger, lime zest, and dark rum, and mix well. Pour the filling into the crust. Bake until the filling bubbles and the sugar is dissolved, about 40 minutes. Let cool for about 20 minutes.
