Basic Pizza Dough
3/4 cup olive oil, preferably extra-virgin
1-1/2 pounds fresh greens such as romaine lettuce, beet tops, chicory, dandelion, escarole, or spinach, tough stems removed, washed, dried, and coarsely chopped
4 garlic cloves, minced or pressed
cornmeal, if using a pizza peel
3 cups (about 12 ounces) grated Gruyere or shredded smoked mozzarella cheese
1 pound bacon, fried crisp and crumbled
2 cups peeled, seeded, chopped, and well-drained vine-ripened tomatoes
salt
freshly ground black pepper
Recipe
1 Prepare the dough and preheat the oven as directed in the basic recipe.
2 Heat 1/4 cup of the olive oil in a saute pan or large skillet over medium heat. Add the chopped greens, cover, and cook just until the greens are wilted, about 45 seconds. Stir in the garlic and cook, uncovered, until the greens are just tender, about 2 minutes. Cool and drain well in a sieve, pressing out excess moisture with the back of a wooden spoon.
3 Shape the pizza dough as directed in the basic recipe. Brush dough all over with olive oil, then cover with the cheese, leaving a 1/2-inch border around the edges. Top with the sauteed greens, bacon, and tomatoes. Season to taste with salt and pepper. Drizzle evenly with olive oil.
4 Transfer the pie to the preheated baking surface and bake as directed in the basic recipe. Remove from the oven to a cutting tray or board and lightly brush the crust with olive oil. Slice and serve immediately.
