    1 med. onion - sliced
    1 med. green bell pepper - sliced
    8 oz. mushrooms - sliced
    1 Tbls. olive oil
    8 oz. roast beef - shaved
    3 Tbls. Worcestershire sauce
    1/4 tsp. ground black pepper
    1 recipe Sicilian Thick Crust Dough *
    3 Tbls. olive oil
    1 tsp. minced garlic
    4 cups shredded provolone cheese
    1/4 cup grated Parmesan cheese

    -Saute vegetables in olive oil until limp; add roast beef.
    -Cook for three more minutes.
    -Add Worchestershire sauce and pepper; stir and remove from heat.
    -Set aside.
    -Brush prepared dough with olive oil and spread crushed garlic over entire surface of dough.
    -Top with a light layer of shredded cheese, then meat and vegetable mixture, distributing evenly.
    -Top with remaining shredded cheese, then Parmesan.
    -Bake in 500 degree oven until cheese is melted and bubbly.
    -Let sit 5 minutes before cutting and serving.

    YIELD: 8 Servings

    Thick Sicilian Pizza Crust

    Serves : 12
    Prep. Time : 2:15



    2 packets active dry yeast
    4 cups all-purpose flour - divided
    1/2 cup warm water - 110 degrees
    1 tsp. salt
    1 cup cool water
    pizza sauce - of your choice, as needed
    shredded cheese - of your choice, as needed
    toppings - of your choice, as needed

    -Combine yeast, 1/2 cup flour, and warm water in a bowl; cover with plastic wrap; allow to rise for 15 minutes.
    -Stir to deflate.
    -In a separate bowl, combine 2 cups flour, salt, and cool water.
    -Combine the two mixtures in a bowl with the remaining flour.
    -Turn dough onto a floured board and knead for 15 minutes.
    -Place dough in a bowl lightly dusted with flour; cover with plastic wrap; allow to rise until doubled in size, about 1 1/2 hours. (see NOTES)
    -Punch down dough and roll out on a lightly floured surface.
    -Lightly oil a 17 1/2" X 11 1/2" X 3/4" pan.
    -Place dough in pan and push to stretch out evenly, leaving a lip against sides of pan.
    -Allow to rest for 15 minutes.
    -Stretch out dough again and spread sauce over crust and top with cheese and desired toppings.
    -Cook in center of 450 degree oven for 25 minutes, or until crust is golden brown.

    NOTES : After allowing the dough to rise, you may place it in a plastic zipper bag and refrigerate. When ready to use, proceed with instructions..
