    Shrimp Pizza with Spinach & Mushrooms Alfedo

    1 12-inch Mama Mary's® Gourmet Pizza Crust( or any prepared crust)
    olive oil to mist crust
    1 tablespoon olive oil
    1 pound medium shrimp, peeled & deveined
    2 cups sliced mushrooms
    2 tablespoons chopped garlic
    3 cups fresh spinach
    3/4 cup four-cheese Alfredo sauce (reduced fat)
    1/2 teaspoon dried oregano
    1/2 teaspoon basil
    1 cup Mozzarella cheese, shredded


    Recipe

    Preheat oven to 450°F.

    Line a vented pizza pan or large baking sheet with parchment baking paper trimmed so that edges do not hang over the pan and will not touch oven walls. Place pizza crust on pan and mist crust and rim with olive oil.

    Heat 1 tablespoon olive oil in a medium non-stick skillet. Sauté shrimp until pink, add mushrooms and garlic, and continue to sauté until mushrooms begin to brown, about 2 minutes. Add spinach, toss with mushroom mixture, sauté until spinach wilts. Remove and drain.

    Spread Alfredo sauce over pizza crust, then spoon drained spinach mixture over sauce. Sprinkle with oregano and basil; top with Mozzarella cheese.

    Reduce oven temperature to 425° F. Keeping pizza on the pan bake for 12 minutes. To crisp the crust, remove pizza from pan and place directly on oven rack for 3 additional minutes.

    Yields 8 slices
