    This recipe takes quite a bit of planning ahead (making the dough, marinating the chicken), but its definitely worth it. Be sure to buy a quality chutney, it can make quite a difference. Chutney is a spicy condiment that contains fruit, vinegar, sugar and spices. It can range in texture from chunky to smooth and in degrees of spiciness from mild to hot. Fresh mango pieces are a great topping as well!

    List of Ingredients




    For the Dough:

    1 tablespoon sugar
    1 cup warm water
    2 teaspoons active dry yeast
    3 cups all-purpose flour
    1 teaspoon salt
    1 teaspoon olive oil

    For Yogurt Sauce:

    1 clove garlic - minced
    1/2 teaspoon cumin
    1/4 teaspoon ginger
    1/4 teaspoon curry powder
    1/4 teaspoon jalapeno - minced
    1/2 cup tomato - chopped
    1/4 cup chicken broth
    1/4 cup yogurt
    1 tablespoon fresh cilantro - coarsely chopped

    Assembly:

    1/4 small onion - sliced
    1/2 bell pepper - julienned
    1/4 pound tandoori chicken - cubed
    1/2 cup mozzarella cheese - shredded
    Major Grey mango chutney

    For the Dough--

    In a small bowl, dissolve the sugar in the warm water. Sprinkle the yeast over the water and stir until it dissolves. Let the yeast mixture stand for 5 minutes, until a layer of foam forms on the surface. In a large bowl, combine the flour and the salt. Make a well in the center of the flour mixture and pour the olive oil and the yeast mixture. Stir the flour into the wet ingredients, until all the flour is incorporated. If its too dry, add more water. On a lightly floured surface, knead the dough for 15 minutes, until it is smooth and elastic. Shape the dough into a ball and put in a well-oiled bowl. Cover with a moist towel and let rise in a warm place until double in bulk (about 1 1/2 hours).

    For Yogurt Sauce--

    In a medium saucepan, heat olive oil over medium heat. Add garlic; saute for 1 minute. Add cumin, ginger, and curry powder. Cook for 1 more minute, stirring occasionally. Add jalapeno, tomato, chicken broth, and yogurt. Stir and allow mixture to come to a boil. Cook until most liquid has evaporated. Transfer mixture to a blender. Add cilantro; puree until smooth.

    Assembly--

    Punch the dough down, and divide into 2 equal portions. Roll out each portion into an 9-inch flat circle. Spread half of the yogurt sauce over the dough. Top with half the onion and bell pepper. Top with half of the mozzarella. Top off with half the chicken. Repeat with remaining dough and ingredients. Place the pizzas in the oven (on top of pizza stones). Bake until crust is crispy and cheese is bubbling (8-10 minutes). Remove pizzas from the oven. Serve pizzas with mango chutney.
