Bean: Black White and Red Bean Salad

"An old newpaper recipe. A nice side dish at a barbecue and a good way to get some more beans into your diet."
List of Ingredients
4 sun-dried tomatoes
1 (16.00 ounces) can black beans
1 (16.00 ounces) can cannellini beans
1 bunch scallion, chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
salt and pepper
Recipe
1. Cover tomatoes with 1/2 c. boiling water
2. Let stand for 5 minutes.
3. Drain tomatoes, reserving water.
4. Slice tomatoes 1/2 inch thick.
5. Rinse beans, place in bowl with tomatoes and scallions.
6. Combine olive oil, balsamic vinegar, 4 tbsp.
7. of tomato water, and salt and pepper, whisking together.
8. Pour over beans, tossing lightly.
YIELD: 4 - 6 Servings
