    Vegetable: Beets In Sour Cream Salad

    List of Ingredients

    1 16-ounce can beets sliced, drained
    2 tablespoons sugar
    2 tablespoons lemon juice fresh
    1/4 teaspoon thyme dried, crushed
    Grated or thinly sliced onion to taste
    Salt and freshly ground pepper to taste
    1 cup sour cream
    Shredded lettuce
    Paprika
    chives Chopped

    Recipe


    Place beets in a bowl. In a small saucepan, place sugar, lemon juice, thyme, onion and salt and pepper; heat and stir. When thoroughly heated, stir in sour cream and pour over beets. Chill and serve on individual plates covered with lettuce; sprinkle with paprika and chives.

    YIELD: 4 Servings
