Entree: Smoked Turkey & Strawberry Spinach Salad

List of Ingredients
3/4 cup Strawberry jelly
3 tablespoons Red wine vinegar
3 teaspoons Grated lemon peel
6 cups Baby spinach
3 cups Cooked cubed smoked turkey or chicken
1 (20 ounce) can Mandarin oranges, chilled and drained
3 Thin slices red onion separated into rings
Recipe
In a small saucepan combine jelly, vinegar and lemon peel. Cook over medium-high heat until jelly is melted, stirring frequently. Cool 10 minutes.
Meanwhile arrange spinach, turkey, strawberries, oranges and onion rights on plates. Serve with dressing.
NOTE: May substitue raspberry preserves for the jelly and 2 cups fresh raspberries for the strawberries.
