Green: Cape Cod Chopped Salad

Recipe Introduction
This is an Ina Garten recipe. I don't know why this is called a chopped salad, since the only chopped things in it are the walnuts, apple and bacon, but it's very good. It makes a nice main course salad with some good bread.
List of Ingredients
SALAD:
8 oz. thick-cut bacon
8 oz. baby arugula
1 large Granny Smith Apple, diced
1/2 c. toasted chopped walnuts
1/2 c. dried cranberries
6 oz. bleu cheese, crumbled
DRESSING:
3 T. apple cider vinegar
1 t. grated orange zest
2 T. freshly squeezed orange juice
2 1/2 t. Dijon mustard
2 T. maple syrup
Kosher salt
1/2 t. freshly ground black pepper
2/3 c. extra virgin olive oil Recipe
SALAD:
Preheat the oven to 400 degrees. Place the bacon on a rack in a sheet pan and roast for about 20 minutes, until brown and crisp. Cool and chop into large pieces.
In a large bowl, place the arugula, apple, walnuts, cranberries and bleu cheese. Toss well.
DRESSING:
Whisk together the vinegar, orange zest, orange juice, mustard, maple syrup, 1 1/2 t. salt and pepper. Slowly add the oil, whisking continuously.
Add the bacon to the salad and enough dressing to moisten. Toss well and adjust salt and pepper, to taste.
Serves 4 as main dish, 8 as a first course.
