    Potato: Cajun Potato Salad

    List of Ingredients



    2 lbs. small red potatoes

    1/2 cup chopped red onions

    1/2 cup sliced green onions

    1/4 cup minced parsley

    6 Tbls. cider vinegar

    1/2 lb. precooked smoked kielbasa or cajun sausage sliced

    6 Tbls. oil

    1 Tbls. dijon mustard

    1/4 tsp. minced garlic

    1/4 - 1/2 tsp. cayenne pepper



    Recipe



    Cook the potatoes in boiling salted water for 20-25 minutes until tender; drain.


    Cool completely.


    Cut into 1/4" slices and place into a bowl.


    Add onions, parsley and 3 Tbls. vinegar; toss.


    In a skillet, cook sausage in oil for 5-10 minutes, until it begins to brown.


    Remove with a slotted spoon and add to the potato mix.


    To the drippings add mustard, garlic, pepper and remaining vinegar.


    Bring to a boil, whisking constantly.


    Pour over the salad and toss.


    Serve immediately.
