Slaw: Carrot & Pepper Slaw

List of Ingredients
2 red or green bell peppers, trimmed and cut into ¼-inch dice
4 green onions, sliced thin
8 carrots, coarsely shredded
½cup light mayonnaise
½cup plain nonfat yogurt
1 tablespoon balsamic vinegar
Salt and black pepper to taste
Recipe
Combine the peppers, onions and carrots in a mixing bowl. Stir together the mayonnaise, yogurt and vinegar and toss with the vegetables. Add salt and black pepper to taste.
MAKES 8 SERVINGS.
