    Vegetable: Divine Grilled Corn and Red Pepper Salad

    List of Ingredients

    4 husked corn cobs, cooked
    1/2 red or orange pepper, cut into two pieces
    2 green onion, finely chopped
    1/4 cup (50 mL) finely chopped red onion
    6 tbsp (90 mL) olive oil
    3-4 tbsp (45-60 mL) ReaLemon® Lemon Juice or ReaLime® Lime Juice
    2-3 tbsp (30-45 mL) finely chopped fresh coriander or parsley
    1/4 tsp (1 mL) ground cumin
    Salt and freshly ground pepper, to taste

    Recipe

    Lightly brush corn and red pepper with vegetable oil.

    Place both on greased grill over medium-high heat; cook, turning as required until heated through and lightly charred. Let cool.
    Cut off corn kernels and dice pepper. Combine corn kernels and red pepper with remaining ingredients.

    Cover and let stand 30-60 minutes.

    YIELD: 4 Servings
