    Vegetable: Marinated Garden Salad

    List of Ingredients




    1 1/2 lbs. fresh green beans

    1 Pint cherry tomatoes cut in half

    1-2 cups thinly sliced red onions ( can be chopped also)

    1 cup sliced fresh mushrooms

    DRESSING:

    1 1/2 cups vegetable oil

    2/3 cup cider vinegar

    2 Tbls. sugar

    4 tsp. dijon mustard

    salt and pepper to taste

    Recipe





    In a glass jar with a lid mix the dressing ingreients together and shake well. Set aside

    Cook beans covered with water until just crisp tender. Drain and set aside.

    In one bowl combine tomatoes,onions and 1/2 cup of the dressing.

    In another bowl combine the mushrooms and q/4 cup of the dressing.

    In a third bowl combine the drained beand and the remaining dressing.

    Chill the veggies in their separate bowls for at least 4 hours.

    To serve, arrange vegetables on a platter.

    Serves 8-10
