Local Boy Sandwich

Waffle Mix:
2 cups Bisquick
1 cup milk
1 egg
2 Tbs vegetable oil
1 tsp chopped fresh basil
Spray waffle iron with non-stick spray. Cook waffle until golden brown.
Sandwich Ingredients:
3 oz. bay shrimp
2 oz. baby lobster
1 tsp Dijon mustard
2 leaves of green leaf lettuce
3 slices tomato
2 basil waffles
Fresh Dill Mayonnaise Aoli:
1 cup mayonnaise
1/4 cup rice vinegar
3 Tbs chopped fresh dill
Mix shrimp and lobster with Dill Aoli
Spread mustard on waffle. Place lettuce leaf, then tomatoes, then shrimp and lobster. Cover with second waffle. Cut into four and serve with pasta salad.
