Wraps: Moroccan Wrap

1 pound Lean Ground Beef
1 medium yellow onion, sliced
8 ounces fresh mushrooms, sliced
2 cloves garlic, chopped
1/4 cup red wine
2 teaspoons ground cumin
2 teaspoons dried coriander
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon pepper
1/4 teaspoon salt
1 1/2 ounces raisins (optional)
6 flour tortillas, 98% fat free
Recipe
1. In a large nonstick skillet over medium heat, cook onions and mushrooms until onions are almost transparent. Stir frequently, and cover the skillet in between to retain moisture.
2. Add next ten ingredients (through raisins). Crumble ground beef as you brown.
3. Heat tortillas according to package instructions.
4. Divide beef mixture between tortilla shells. Wrap and serve.
Makes 6 servings.
Cooking Tip: When cooking the onions and mushrooms, covering the skillet in between stirring helps retain moisture. For plump raisins, soak in water for about ten minutes, then drain before adding to beef mixture.
