    Coulis: Sweet Pepper Coulis

    List of Ingredients




    2 each Red peppers (quartered and seeded)
    4 each Cloves of garlic (peeled)
    1/2 Tblsp. Whole corriander
    1/2 Tblsp. Whole black pepper
    1/2 Tblsp. Whole butter

    Recipe



    1) Simmer all above ingredients in a stainless steel sauce pan, until tender.
    (2) Add 12 oz. canned clam juice and bring to a boil.
    (3) Puree mixture in blender, until smooth.
    (4) Mix some arrowroot with water and thicken above mixture.
    (5) Let cool.
    (6) Add 1/4 cup sour cream or plain yogurt and blend untill smooth.
    (7) Add 1 oz. White wine vinegar.
    (8) Season to Taste with salt and pepper.


    This is a wonderful sauce for poultry or seafood.

    This sauce is to be served room temperature.
