    Rice: Southwestern Cheesy Cauliflower Rice

    List of Ingredients


    1 Large Cauliflower or 2 small
    3 shallots minced
    2 TBLS of olive oil
    5 slices of American Cheese
    1/4-1/3 cup of heavy cream
    2 tsp of Somersize Southwest Sea Salt Rub
    Optional Ingredients Ideas
    Finely Minced 1/2 Red Bell Pepper and/or 1/4 cup Diced Green Chiles

    Cut of outer leaves and center of cauliflower and discard. Pull into flowerettes and place them in food processor. Do in 2 batches since it makes a more uniform "rice".

    Pulse until the cauliflower looks like the size of a large rice grain. Be careful and don't over pulsate, since it will turn to mush. Mince shallots and optional red bell pepper.

    Saute shallots, red pepper and cauliflower in skillet with a lid in olive oil for 5-7 minutes over medium high heat.

    Reduce heat to medium low to low and cover pan with a lid for 10 minutes.

    Make sure red pepper is done. Add cheese and cover until melted. Stir in heavy cream, SS Southwest Sea Salt Rub and optional diced green chiles. Serve with favorite Southwestern main dish. Enjoy!
