List of Ingredients
1 pound lean ground beef
2 Tbs. oil
2 cups coarsely chopped onion
1 Tbs. finely chopped garlic
1 1/2 Tbs. chili powder
1 teas. oregano
1 teas. ground cumin
1 small pinch cinnamon
1 teas. red pepper flakes
1 six-ounce can tomato paste
4 cups beef stock, fresh or canned
1/2 teas. salt
Freshly ground black pepper
2 cups kidney beans
Recipe
In a 4 quart stew pot, heat oil over medium high heat. Add the ground beef and cook until lightly browned, breaking it up with a fork as it browns. Add onion and garlic and cook for another 4 to 5 minutes, stirring frequently. Mix in all other ingredients, except kidney beans, and bring to a boil. Turn heat to low and simmer 45 minutes. Add kidney beans to chili and continue to simmer another 15 minutes.
YIELD: 6 - 8 servings
