    Chili: Turkey Chili

    List of Ingredients




    2 T. olive or vegetable oil
    2 pounds ground turkey
    1 large onion, coarsely chopped
    1 clove garlic, minced
    1 t. salt
    1/2 t. pepper
    1/4 t. sugar
    2 T. pure chile powder, mild or hot*
    1/2 t. ground cumin
    2 t. Mexican oregano
    1 bay leaf
    1 medium green chile pepper, seeded, coarsely chopped
    2 cups cooked pinto or kidney beans
    2 cups water or chicken broth

    Recipe



    Heat oil in a 2-quart saucepan. Add meat, onion and garlic. Brown. Add all other ingredients. Cover and simmer over low heat for 30 minutes. Remove bay leaf and continue cooking uncivered for 30 minutes more.

    Yield: 4-6 servings

    Serving suggestion: Garnish each serving individually with diced onion, grated Monterey Jack cheese, and chopped fresh cilantro.

    *For a much hotter chili. add 1 t. ground chipotle powder in addition to either mild or hot chile powder. (Chipotle peppers are dried and smoked jalapenos.)
