    6 chicken-broth cubes
    2 cups chopped onion
    2 Tbsp paprika
    1 tsp caraway seeds (optional)
    4 all-purpose potatoes, peeled and cut in 1/2-in. cubes (5 cups)
    1 lb green cabbage, coarsely shredded (8 cups)
    8 oz kielbasa, coarsely chopped
    1 can (8 oz) stewed tomatoes
    1/2 cup reduced-fat sour cream

    Recipe



    1. Bring 7 cups water, the broth cubes, onion, paprika and caraway seeds to boil in a 4- to 5-qt pot over high heat, stirring to dissolve cubes. Add potatoes and cabbage, return to a boil, reduce heat and simmer 20 minutes or until vegetables are tender.

    2. Stir in kielbasa and tomatoes. Increase heat to medium and boil gently 5 minutes to let flavors develop. Remove from heat; stir in sour cream. Ladle into bowls.

    YIELD: 5 Servings
