    Maine Boiled Lobster Tails

    6 c. water

    1 1/2 tsp. salt

    4 6-oz. lobster tails

    Clarified Butter



    Recipe



    In a 3-quart saucepan bring water and salt to boiling. Add lobster tails; return to boiling.

    Simmer, uncovered, for 6 to 10 minutes or till shells turn bright red and meat is opaque; drain. Serve with Clarified Butter. *

    Makes 4 servings.



    * Clarified Butter: In a saucepan melt 1/2 cup butter without stirring. When the butter is completely melted, slowly pour the clear, oily, top layer into a dish. Discard the milky layer left in the pan.
