    Tennessee-Style Beef Stew

    1 tbsp. shortening
    1 lb. stew beef
    1 lg. onion, sliced
    Salt and pepper to taste
    1 c. water
    4 sm. potatoes
    4 sm. carrots
    1 tsp. flour

    Recipe



    Brown meat on all sides in melted shortening; add onions, salt and pepper. Add 3/4 cup water or enough to cover meat. Place potatoes and carrots over meat. Cover and cook for 1 hour. Make a paste of flour and 1/4 cup water, and stir into stew to thicken. Re-cover and continue to cook until meat is tender.
