    Wyoming Chicken Casserole

    5 c. cubed cooked chicken
    1 (7 oz.) pkg. bread cube stuffing
    (Pepperidge Farm)
    2 c. cooked rice
    2 tsp. salt
    1 sm. jar of pimento, chopped
    1 stick butter
    4 eggs, beaten
    2 c. whole milk
    2 c. chicken broth
    1 med. onion, chopped
    2 cans water chestnuts, sliced

    Saute the onion in the butter. Mix all the ingredients together and pour into baking dish. Bake 1 hour at 350 degrees. Make sauce recipe.

    SAUCE:
    1 stick butter
    1/2 c. flour
    1/2 c. sweet cream (light cream)
    1/2 tsp. salt
    1 tbsp. lemon juice
    1 tbsp. parsley, chopped
    1 qt. chicken broth
    1 lg. can mushrooms

    Melt butter and add flour; then add all remaining ingredients. Cook until thick. Serve over the chicken square. I usually make the sauce double.
