Lyonnaise New Beets and Greens

12 young beets
3 tablespoons butter
2 medium onions, thinly sliced
½ teaspoon salt
1/8 teaspoon pepper
1 tablespoon lemon juice Recipe
Cook washed beets until tender in rapidly boiling salted water. Cook beet greens in a small amount of boiling water until tender; drain. Skin cooked beets and dice. Sauté onion rings in butter until tender but not brown. Add to hot diced beets with greens; add seasonings and lemon juice. Serve hot.
