Roasted Red Potatoes and Onions

List of Ingredients
2 pounds new potatoes, scrubbed and quartered
½ sweet onion, thinly sliced
Salt and freshly ground pepper
Olive oil
Recipe
Place the potatoes and onions on a baking sheet. Sprinkle with salt and pepper. Spray with olive oil.
Roast at 400 degrees for 15 to 20 minutes until tender.
NOTE: If grilling, place in double thickness of foil and grill about 20 minutes until tender.
