    List of Ingredients




    2 TBS. Olive Oil
    1 Medium Onion, Finely Chopped
    1 & 1/2 Cups Zucchini, Sliced
    1 Each Eggplant, Small Dice
    1/2 Cup Pinenuts
    1 Cup Tomatoes, Peeled and Diced
    1/2 Cup Nuts, Mixed, Ground
    1 tsp. Cinnamon
    1 tsp. Five Spice

    Variation
    1 Cup Artichoke Hearts
    2 Cups Burger Mix, Vegetarian
    1/2 Cup Bread Crumbs

    Recipe



    1. Saute the onion for 4-5 minutes or until soft.

    2. Add the zucchini, eggplant and spine nuts, and cook for 10 minutes.

    3. Mix in the remaining ingredients and puree in a food processor.

    4. Season to taste with salt and pepper.

    5. Form into patties and refrigerate for 1 hour.

    6. Saute‚ in minimum olive oil until slightly brown and heated through.


    Variation is artichoke burger
