    Where’s-the-Tuna Casserole

    8 ounces whole-wheat noodles, cooked and drained

    1 package frozen mixed vegetables

    1 can low-sodium, low-far mushroom soup

    1 cup low-fat mozzarella or soy cheese, shredded

    1 recipe Where’s-the-Tuna Salad

    Wheat germ

    Recipe



    Preheat the oven to 350 degrees. Mix all ingredients except the “tuna” salad and wheat germ. Pour into a nonstick baking pan and place spoonfuls of salad throughout the noodle mix. Top with wheat germ. Bake for 20 minutes until bubbly. Serves three.

    Where’s-the-Tuna Salad

    1 can (15 ounces) chickpeas, rinsed and drained

    ¼ cup celery, finely chopped

    ¼ cup onion, finely chopped

    1 tablespoon lemon juice

    2 tablespoons soy mayonnaise

    1 tablespoon parsley, chopped

    1 and one-half teaspoons dried, powdered kelp

    salt and pepper to taste

    In a medium bowl, mash the chickpeas with a fork. Add the remaining ingredients and mix well.

    Serves two to three.
