    2 packages dry yeast
    1/3 cup warm water
    2 cups milk
    1 teaspoon salt
    2 tablespoons sugar
    1 stick butter or margarine
    ¾ pound Roquefort Cheese
    6-7 cups enriched flour

    Recipe



    Soften yeast in warm water. Scald milk and add salt, sugar, ½ stick of the butter and Roquefort cheese. Blend until smooth. To this mixture add dissolved yeast and enough flour to make a soft dough. Knead well (approximately 10 minutes). Allow to rise in bowl till doubled in bulk. Punch down, knead again and place in greased loaf pans. Allow to rise again till doubled. Brush top with remaining melted butter and bake in 350 degree oven till golden brown. Makes 2 large or 3 medium loaves.
