    Fresh Peach Crisp


    List of Ingredients


    • 2 1/2 pounds fresh ripe peaches (about 8)
    • 1 cup all purpose four
    • 1 cup sugar
    • 1/4 teaspoon salt
    • 1/2 teaspoon cinnamon
    • 1/2 cup soft butter or margarine
    • Light cream, to serve it with, if desired


    Instructions


    1. Preheat oven to 375 degrees F. Lightly grease an 8 x 8 x 2-inch baking dish.
    2. Wash peaches; peel. Cut in halves; remove pits. Slice peaches into prepared baking dish.
    3. Sift flour with sugar, salt, and cinnamon into a medium bowl.
    4. With pastry blender or 2 knives, cut butter into flour mixture until mixture resembles coarse cornmeal. Sprinkle evenly over peaches.
    5. Bake 45 to 50 minutes, or until topping is golden and peaches are tender.
    6. Serve warm, with cream, if desired.


    Final Comments


    I often double the amount of crumb mixture and increase the amount of peaches and bake in a 13 x 9 x 2-inch pan (takes about 12 to 14 peaches).
