    Pork Sate w/ Cashew Yogurt Dipping Sauce


    List of Ingredients


    • 1 cup plain yogurt
    • 2 tablespoon fresh mild green chilies
    • 1 tablespoon salt
    • 1 1/2 teaspon minced fresh ginger root
    • 1/2 medium onion, minced
    • 2 pounds boneless lean pork, well trimmed, cut into 1" cubes
    • Dipping sauce
    • 1 cup salted cashews
    • 2/3 cup plain yogurt
    • 1 to 2 cloves garlic


    Instructions


    1. Combine 1 cup yogurt with chilies, salt minced ginger,and onion. Toss in pork cubes, stir until pork is coated.
    2. Cover and marinate in refrigerator for about 3 hours.
    3. Prepare charcoal grill, Drain off most of marinade and discard. Divide meat among 6 skewers.
    4. Grill to desired doneness.
    5. Remove from skewers (or serve on skewers, if desired). Serve with Cashew Yogurt Dipping Sauce.
    6. Sauce: Combine sauce ingredients in a food processor or blender and mix unti almost smooth. (Spread with be very thick, can be thinned with additional yogurt, if desired.)
