    Shrimp Pilau

    List of Ingredients




    1/2 pounds sliced bacon, finely diced
    1 1/2 cups long-grain white rice
    2 medium onion, finely chopped
    2 1/4 cups chicken stock or canned broth
    3 medium tomatoes-peeled, seeded and finely chopped
    2 teaspoons fresh lemon juice
    1 1/2 teaspoons Worcestershire sauce
    1 teaspoon salt
    3/4 teaspoon freshly grated nutmeg
    1/4 teaspoon freshly ground black pepper
    1/4 teaspoon cayenne pepper
    2 pounds medium shrimp, shelled and deveined
    1/4 cup minced parsley

    Recipe



    1. Preheat the oven to 350 degrees F. In a large heavy skillet, saute the bacon over moderately high heat until crisp, about 5 minutes. Drain on paper towels and reserve 3 tablespoons of the melted fat.
    2. In a fine sieve, rinse the rice well under cold running water; drain.
    3. In a large heatproof casserole, heat the reserved bacon fat. Add the onions and saute over moderate heat until softened, about 3 minutes. Add the rice and stir to coat with the fat. Add the chicken stock. tomatoes, lemon juice, Worcestershire sauce, salt, nutmeg, black pepper and cayenne. Bring to a boil. Cover and transfer the casserole to the oven.
    4. Bake for 20 minutes. Remove the casserole from the oven and stir in the shrimp and bacon. Return to the oven and bake, uncovered, for 15 minutes. Let stand at room temperature for 10 minutes. Fluff up the pilau with a fork, adjust seasoning, if necessary, and sprinkle the parsley on top.
