    Salad- Lettuce Slaw w/ Bacon Dressing


    List of Ingredients


    • 1/2 large head Iceberg lettuce, washed, core removed
    • 1/2 head Romaine lettuce, washed
    • 4 strips bacon
    • 1 small onion, chopped
    • 1/4 cup chopped fresh parsley
    • 1/2 cup salad oil
    • 1/4 cup cider vinegar
    • 1 teaspoon salt
    • 1/2 teaspoon Hungarian sweet paprika
    • Pinch of Sugar
    • Dash of freshly ground black pepper


    Instructions


    1. Dry water from washing off both lettuces. Shred iceberg lettuce. Tear Romaine into bite size pieces. Combine both lettuces in a salad bowl.
    2. Cut bacon into 1/2 inch strips. In skillet, cook bacon until crisp. With slotted spoon remove bacon and set aside, leaving fat in pan.
    3. In bacon fat, cook onion and parsley until onion is limp and translucent, careful not to brown. Remove from heat.
    4. Pour into medium size bowl and add remaining ingredients; stir until blended. Check seasonings add salt and additional black pepper to taste.
    5. Pour dressing over salad and toss to coat.
