    Madeira Sauce


    List of Ingredients


    • 1 tablespoon butter
    • 4 large mushrooms, sliced
    • Salt and freshly ground pepper
    • 2 tablespoons finely chopped shallots
    • 1/3 cup Madeira
    • 1 1/2 cups Brown Sauce or 1 can (10 3/4 ounce) beef gravy


    Instructions


    1. Heat the butter in a skillet and add the mushrooms. Sprinkle with salt and pepper to taste and cook until the mushrooms give up their liquid.
    2. Add the shallots and cook, stirring, until most of the liquid evaporates.
    3. Add the wine and cook one minute, then add the brown sauce and simmer fifteen minutes longer.


    Final Comments


    Good way to use up leftover gravy--chicken and or turkey works too. Chicken with sauteed boneless, skinless chicken breasts.
