    Chutney- Nectarine Chutney

    List of Ingredients

    2 1/2 pounds firm ripe nectarines peeled and sliced
    1 1/4 cups distilled white vinegar
    1 1/2 cups sugar
    1 3-inch long cinnamon stick
    2 tablespoons raisins
    1 1/2 tablespoons fresh lemon juice
    2 teaspoons ground coriander
    1 1/2 teaspoons dry mustard
    1 teaspoon ground ginger
    1 teaspoon salt
    1/2 teaspoon cayenne pepper
    1/2 teaspoon pepper
    1/2 teaspoon grated lemon peel
    1/4 teaspoon ground cloves


    Recipe

    Bring nectarines and 1 cup vinegar to boil
    in heavy 4-quart nonaluminum saucepan.
    Reduce heat to medium and cook until fruit is
    just tender, stirring occasionally, about 6
    minutes.
    Transfer nectarines to bowl using slotted
    spoon. Mix sugar, cinnamon stick and
    remaining 1/4 cup vinegar into fruit poaching
    liquid. Boil gently until mixture thicken to
    thin syrup, stirring occasionally, about 10
    minutes. Add nectarines and remaining
    ingredients. Cook over medium heat until
    mixture resembles thick jam and is reduced to
    3 cups, stirring constantly, about 15
    minutes. Discard cinnamon stick. Cover and
    store in refrigerator.
