    Corn- Baked Corn au Gratin

    Sunset's Favorite Recipes 1978

    List of Ingredients

    6 ears corn, or 1 can (12 oz) whole-kernel corn, well drained
    1 small onion, finely chopped
    1 green pepper, finely chopped
    3 tablespoon butter or margarine
    3 tablespoons all-purpose flour
    2 cups milk
    1 cup shredded American or mild Cheddar cheese
    Salt and pepper to taste
    1 teaspoon sugar
    2 eggs, well beaten
    Crushed cornflakes, or Crumb Butter Topping

    Recipe

    If fresh corn is used, cut kernels from cob. In a saucepan, saute onion and green pepper in butter until tender; stir in flour; add milk and cook stirring constantly, until mixture is thick and smooth. Remove from heat, stir in the cheese, salt, pepper, sugar, corn, and then the eggs.
    Turn into a greased casserole and top with crushed cornflakes or Crumb-Butter Topping. Set in a shallow pan of hot water and bake in a 350 degree F oven about 45 minutes. Serves 6
