    Green Beans- With Winter Pesto


    List of Ingredients


    • 3 (10 ounce each) package frozen Italian green beans
    • 1/2 cup olive oil or half olive oil and half vegetable oil
    • 1 teaspoon salt
    • 1 large clove garlic, peeled
    • 1/2 cup walnuts, slightly broken up (processor will do rest)
    • 1 cup parsley sprigs, packed to measure
    • 2 teaspoons dried dillweed


    Instructions


    1. Cook beans according to package directions.
    2. While beans cook, put oil, salt and garlic in blender or food processor. Cover and blend until garlic is broken up.
    3. Stop machine; add walnuts, parsley and dill, pushing them well down into the oil mixture. Cover and blend to an almost-smooth puree.
    4. Toss sauce wth hot, drained green beans. Sauce may be made up to 2 hours ahead. Makes about 4 1/2 cups beans. 8 to 10 servings.
