    Fettucine with Ham and Peas

    Recipe Introduction

I tried to lower the fat in this recipe at one point but I didn't like the consistency. I don't have a fat, etc. breakdown, but "as is" and only occasionally is how we enjoy this recipe.

    List of Ingredients

    1 medium-size onion, finely chopped
    3 TBSP. butter
2 cups (about 8 oz.) fresh mushrooms, thinly sliced
    Pint of heavy cream
2/3 pound cooked ham (can buy at deli and have thinly or thickly sliced), cut into small cubes/"squares"
    1 pkg. frozen peas, thawed
    1 - 1 1/2 cup grated Parmesan cheese
    Fresh ground pepper
    salt (if you need it)
1 box (12 oz.) of fettucine

    Recipe

Cook fettucine prior to making sauce or during...
Melt butter in large, deep fry-pan. Saute onion until soft but not browned - about 5 mins. Add mushrooms and brown slightly - about 4 mins. Stir in cream and simmer for 2 mins. Add hams and peas. Cook the mixture until heated through, stirring, for about 3 mins.
Drain fettucine and place it in a very large serving bowl.
Stir Parmesan cheese into the sauce in the skillet - push aside the other ingredients to have better access to cream. Add pepper. Spoon sauce over fettucine and mix thoroughly.
    Serve immediately - cool quickly.
