    Apple Gingerbread Cobbler

    List of Ingredients


    • 4 cups sliced apples (pealed and cored)
    • 1/2 cup brown sugar
    • 1 tablespoon lemon juice
    • 1/2 teaspoon ground cinnamon
    • 1 cup water
    • 1/4 cup granulated sugar
    • 1 egg
    • 1/2 cup buttermilk
    • 1/4 cup molasses
    • 2 tablespoons Canola oil
    • 1 cup sifted all-purpose flour
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1 teaspoon ground ginger
    • 1/2 teaspoon freshly grated nutmeg
    • 1/4 teaspoon salt
    • 2 teaspoons cornstarch
    • 1 tablespoon water


    Instructions


    1. Combine apples, brown sugar, water, lemon juice, and cinnamon in a sauce pan. Cover and cook until apples are almost tender.

    2. Beat together the granulated sugar, egg, buttermilk, molasses, and oil.

    3. Stir together the flour, baking soda, baking powder, spices, and salt. Add to egg mixture and beat until smooth.

    4. Combine cornstarch and 1 tablespoon water. Stir into the apple mixture.

    5. Pour the apple mixture into a 2-quart casserole. Spoon the gingerbread mixture on top.

    6. Bake uncovered in a 350 degree oven for 30 minutes or until gingerbread is done. Serves 6 to 8.
