    Chicken Phyllo Wraps

    List of Ingredients




    1 lb. ground chicken
    1 cup chopped fresh mushrooms
    2 medium onion, chopped
    3 cups cooked rice
    1 cup ricotta cheese
    1 pkg of frozen spinach thawed and well drained
    1 can 2 1/4 ozs. sliced black olives drained
    1/4 c pine nuts
    2 cloves garlic minced
    1 t. ground oregano
    1 t.lemon pepper
    12 phyllo sheets

    Recipe



    Sear chicken in hot skillet ...lower heat and add onion, cook til chicken is no longer pink and veggies are tender. Add rice, ricotta cheese, spinah, olives , nuts, garlic, oregano, and lemon pepper and stir to 2-4 minutes until well blended and throughly heated.

    Working with l sheet at time...brush melted butter ... fold in half lengthwise.

    Place 3/4 to 1 c rice mixture on one end of phyllo strip. Fold left bottom over forming a triangle...continue folding back and forth like a flag making a triangle.

    When you get to the end of the strip moisten with water. Repeat with the other sheets.

    Place on cookie sheet and bake 400 degrees until golden brown..... 15-20 min.
