    Broiled Tilapia Parmesan

    I found what would be the genesis of this recipe on the Acme Supermarkets website, but after reading their ingredients list, I wrinkled my nose and said to myself, "no, no... this could be better." And so I endeavored to make it so. I hope you like it.


    List of Ingredients


    • 4 tilapia fillets
    • 1/2 cup of Parmesan cheese (parmigiano reggiano works well, too)
    • 1/4 cup butter, softened
    • 3 tablespoons mayonnaise
    • 2 tablespoons lemon juice
    • About 2 tablespoons chopped fresh basil
    • 1/4 teaspoon freshly-ground black pepper
    • 2 tablespoons minced shallots
    • a dash or two of celery salt


    Instructions


    1. Preheat the oven's broiler. Either grease a broiling pan OR you can alternatively line it with aluminum foil and spray it lightly with grease. I like the aluminum foil option. (Easy cleanup!)
    2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise, and lemon juice. Add the shallots and basil and mix well. Now add the pepper and the celery salt, mix well. Set the mixture to the side. Note: I actually used my hand mixer on its lowest speed to get this part done. Seems to have worked.
    3. Arrange the fillets in a single layer on the prepared pan. DON'T ADD THE MIXTURE YET. Place the fillets in the oven a few inches from the heat for about 2 to 3 minutes. Flip them over and broil the other side for another 2 to 3 minutes.
    4. Take the fillets out of the oven; flip them again on the pan. NOW cover the fillets with the mixture, on the top side only.
    5. Place the pan back into the oven and broil for about another two minutes until the tops of the fillets starts to brown. BE CAREFUL - this is the area of the recipe where stuff usually starts to burn!


    Final Comments


    This recipe will take about 30 minutes from start to finish.

    It should also be noted that my fiance - who categorically does NOT eat fish - LOVED this recipe.
