    Peanut Brittle (Frying Pan)

    1 cup white sugar
    ½ cup water
    ¼ cup white corn syrup
    ¼ cup butter OR margarine
    1/8 tsp. baking soda
    1 cup Spanish OR blanched
    OR dry roasted peanuts

    1. Line electric frying pan with wide heavy-duty aluminum foil. (Make as flat as possible. Do NOT puncture.)
    2. Put sugar, water, syrup, and margarine in frying pan. Set on the highest temperature.
    3. Stir occasionally using the back of a tablespoon. Cook until golden brown---approximately, 15 minutes.
    4. Switch off heat. Quickly stir in baking soda. Add peanuts, and stir.
    5. Lift foil and candy out of pan. Place on cookie sheet---protect surface under cookie sheet.
    6. Spread candy as thin as possible.
    7. Let cool, and break into pieces. Store in covered container in a cool place. Do not refrigerate.
