    ~Bee's Banana Pudding~

    Recipe Introduction

    This is one of my favorite desserts. If you're counting calories, this is not for you.

    List of Ingredients

    (Small)

    1 Box Nabisco Nilla Wafers (or whatever brand you like)
    2 cups sugar (if you like it sweet)
    1 cup flour*
    1 box My*T*Fine Banana Pudding & Pie Filling
    3 eggs, separated
    2 cups of milk
    1 teaspoon vanilla extract
    1 teaspoon banana extract
    6 to 8 bananas (not too ripe & but not green)
    dash salt
    8 1/2 ounces crushed or chunks pineapples in heavy syrup (drained completely



    Recipe

    Mix flour, sugar, pudding and salt together. Put in double boiler over boiling water. Add milk, mixed well, stir in beaten egg yokes before mixture gets to hot.

    1) Cook on medium heat stirring constantly until it thickens. Turn off heat, add vanilla and banana extract and pineapples.

    2) Cover bottom of 2 quart casserole with custard. Cover with a layer of wafers, then layer of banana and layer of custard. Continue layering, ending with custard.

    3) Beat egg whites until stiff, add 1/4 cup sugar and 1/2 teaspoon of vanilla. Spread on top making sure edges are completely sealed. Bake in 350 degree oven until golden brown. Check often. Sprinkle with about 2 teaspoons of sugar about 1 minute before taking out of oven.

    NOTE: If you don't use the pudding mix, use 1 1/2 cups of flour
