    4 freshly cooked crabs
    1 celery stalk, diced
    1 scallion, finely chopped
    1 small fresh green chili, seeded and finely chopped
    5 tablespoons mayonnaise
    2 tablespoons fresh lemon juice
    1 tablespoons snipped fresh chives
    1/2 cup fresh bread crumbs
    1/2 cup grated cheddar cheese
    2 tablespoon butter, melted
    salt and freshly ground black pepper
    fresh parsley sprigs, to garnish

    Recipe



    1) Preheat the oven to 375 degrees F. Remove the meat from the crab
    body and claws. Reserve the whole shells.

    2) Scrub the crab shells. Cut open the seam on the underside with
    scissors. The inner part of the shell should break off cleanly along
    the seam. Rinse the shells and dry them well.

    3) In a bowl, combine the crabmeat, celery, scallion, chili,
    mayonnaise, lemon juice and chives. Season and mix. In a separate
    bowl, toss together the bread crumbs, cheese and melted butter.

    4) Pile the crab mixture into the shells. Sprinkle with the cheese
    mixture. Bake for about 20 minutes, until golden brown. Serve hot,
    garnished with parsley.

    Serves 4
