    Ingredients:

    3 pounds oxtail, chopped into pieces
    7 1/2 cups water
    1 onion, finely chopped
    3 bay leaves
    4 thyme sprigs
    3 whole cloves
    6 ounces dried lima beans, soaked overnight
    2 garlic cloves, crushed
    2 tablespoons tomato paste
    14 ounce can chopped tomatoes
    1 teaspoon ground allspice
    1 hot chili pepper
    salt
    freshly ground black pepper

    Recipe



    1: Place the oxtail pieces in a large heavy pan, add onion, bay leaves, thyme and cloves and cover with water. Bring to a boil, then reduce heat.

    2: Cover the pan and simmer for at least 2 1/2 hours or until the meat is very tender, adding water whenever necessary.

    3: Meanwhile, drain the beans and cover with water. Bring to a boil and simmer for 1 - 1 1/4 hours. Drain and set aside.

    4: When the oxtails is cooked and the stock is well reduced, add the garlic, tomato paste, tomatoes, allspice, hot pepper, salt and black pepper. Add the lima beans and simmer for another 20 minutes. The stew should be fairly thick, but if it looks dry add a little water. Adjust the seasoning and serve.

    SERVES: 4 or more
