    Low Fat Oatmeal Raisin Cookies

    List of Ingredients


    • butter-flavored cooking spray
    • 2 cups rolled oats
    • 1 1/2 cups unbleached all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon salt
    • 2/3 cup raisins
    • 1 large egg OR 1/4 cup egg substitute
    • 3 tablespoons cooking oil
    • 3/4 cup applesauce
    • 1 1/2 teaspoons vanilla extract
    • 1/3 cup light brown sugar
    • 1/3 cup granulated sugar


    Instructions


    1. Preheat oven to 350°F . Lightly spray a cookie sheet with cooking spray. In a large bowl, combine oats, flour, baking soda, cinnamon, nutmeg, and salt. Toss with raisins.

    2. In a medium bowl, cream together egg, canola oil, applesauce, vanilla, and the sugars.

    3. Mix everything together well. Drop by the tablespoonful onto prepared cookie sheet. Bake for 12 to 15 minutes until golden brown.



    Final Comments


    For almost any recipe you have , you can substitute applesauce for the liquid oil in the recipe. Example, if a cake mix calls for 1/2 cup oil, you CAN use 1/2 cup applesauce instead. Or you can use 1/4 cup oil and 1/4 cup applesauce. PLEASE, use UNSWEETENED applesauce so you are not just adding a bunch of sugar.

    Carbohydrates are 4 calories per gram. Protein is 4 calories per gram. Fat is 9, yes I said 9 calories per gram. That's why it helps to watch the fat. It is over 2 times higher in calories than carbs or protein.

    These cookies are good and kids like them. Some might say they are not sweet enough, but it is a natural sweet, not just added sugar.
