    My husband loves this recipe. He would eat it every day if I'd make it that often. I don't know the exact counts, but it is low in fat.


    List of Ingredients


    • 4 boneless skinless chicken breasts
    • Pam spray
    • 1/2 c peach preserves
    • 2T balsamic vinegar
    • handful chopped green onions


    Instructions


    1. Spray a non-stick skillet with Pam. Add the chicken and brown on both sides until juices run clear. ometimes I add a few drops of water and cover the skillet to keep it from sticking.) Remove to a
      plate.
    2. Add peach preserves, vinegar, and onions to the skillet and cook until the preserves melt. Add the chicken back in and cook for a few minutes so the flavors can saturate the chicken.
    3. I serve it with some brown rice or couscous that I've cooked in fatfree chicken broth and added a handful of frozen green peas at the end. A nice green salad and some broccoli rounds out a nice dinner.
