    Brandy Fruit Cake

    This recipe is great for people who do not like traditional fruit cake.


    List of Ingredients


    • 1 cup butter
    • 1 3/4 cup sugar
    • 3 cup flour
    • 1 tsp baking soda
    • 1 tsp cinnamon
    • 1/4 tsp salt
    • 1/4 tsp nutmeg
    • 1/4 tsp cloves
    • 6 eggs
    • Brandied Fruit Starter
    • 1 15oz can pineapple drained
    • 1 16oz can peaches drained
    • 1 17 oz can apricots drained
    • 1 10 oz jar cherries drained
    • 1 1/4 cup sugar
    • 1 1/4 cup brandy


    Instructions


    1. Starter; combine all ingredients in a clean non-metal bowl and stir gently Cover and let stand three weeks at room temp. Stir fruit twice a week
    2. cake:combine butter and sugar, beat well
    3. combine next 6 ingredients and add to butter mixture
    4. Add eggs one at a time beating after each
    5. Coarsly chop fruit,add 2 cups to mixture,add rest of ingredients, pour into floured and greased tube pan and bake at350 forone hour and ten minutes. Cake will be moist Let cool and sprinkle with powered sugar
